- ½ cup white rice
- 4 cups soy milk
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- dash of nutmeg
- ¼ cup sugar
Directions[]
- Preheat oven to 275°F.
- Mix all ingredients in a bowl and place in a 1½ quart lightly oiled overproof dish.
- Bake covered for 3 hours, or until the pudding sets.
