This is a vegetarian and vegan recipe adapted from "The Farm Vegetarian Cookbook (Revised Edition)" edited by Louise Hagler (Summertown, Tennessee: The Book Publishing Company, 1978).

Ingredients[]

Dry ingredients[]

  • 1¼ cups whole wheat flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ¼ tsp salt

Wet ingredients[]

  • 1 tbsp. oil
  • 1¼ cups water or ½ cup soymilk and ¾ cup water

Directions[]

  1. Sift together the dry ingredients.
  2. In a separate bowl, mix together the wet ingredients.
  3. Make a hole in the centre of the dry ingredients.
  4. Pour the wet mixture into the dry and mix — only until ingredients are blended.
  5. Heat your non-stick griddle to a medium high temperature.
  6. Cook on one side for 2 minutes, then flip and cook 1 more minute on the other side.
  7. Serve hot.
